“Tortilla” Chicken Soup

Ingredients

  • 100 g chicken
  • 1 1/2 cup of chicken broth ( 1 cup + 1/2 cup)
  • 1 cup fresh tomato, diced
  • 1 TBSP organic tomato paste
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 clove fresh garlic
  • Salt and pepper to taste

Bake chicken with salt and pepper. Shred it. In sauce pan, simmer 1/2 cup of broth with remaining ingredients until bubbly. Add chicken and remaining broth.
